Ka-Pop! Cheesecake Bites
Looking for a no bake cheesecake treat that’s low in sugar and big on flavor? Try this recipe! We used our Fan Favorites Variety Pack to create an assortment of cheesecake flavors, including Churro, S’mores, and Pumpkin Spice!
Ingredients
For filling
3/4 Cup of Cassava flour (or flour of your choosing)
1 1/2 Tbsp of sweetener of your choice (such as stevia or erythritol)
3 tbs. of butter of your choosing, melted (we used vegan coconut butter)
For cheesecake
8 oz. pack of your favorite cream cheese, softened
3 Tbsp butter of your choosing
5 Tbsp sweetener of your choice (such as stevia or erythritol)
1 Bag of your favorite Ka-Pop! Puffs (Try our Fan Favorites Variety pack)
Instructions
- Combine cream cheese, butter, sweetener, and cinnamon in a bowl until smooth
- Chill in refrigerator for 1 hour
- Line a baking sheet (small enough to fit in your freezer) with parchment paper
- In a bowl, combine almond flour, sweetener, and melted butter
- Separate the mixture into 12-15 similar sized pieced and roll into balls
- Set aside or put in refrigerator
- Once cream cheese mixture is done chilling, take the balls you’ve started and coat them in about 1-2 tbs of the cream cheese mixture. Roll around until forming a ball
- Put your Ka-Pop! Puffs in a food processor or blender until they reach a breadcrumb like consistency
- Pour mixture onto a plate and roll each ball in Ka-Pop! mixture until well-coated, repeat
- Store in airtight container in refrigerator
