Mini Vegan Pumpkin Pies
Ingredients:
8 ounces medjool dates, pitted
1/2 cup pumpkin puree 1 tsp pumpkin pie spice
1/2 tsp salt
2 Tbsp melted coconut oil
Olive Oil & Seal Salt Ka-Pop! Chips
Sea salt and pumpkin seeds to garnish
Directions:
Add dates to a food processor and mix until a ball forms. Then add in pumpkin puree and spices and mix. While mixing, stream in melted coconut oil until a paste forms. Spread about 1/2 tablespoon of mixture on the Ka-Pop! chips and top with a few pumpkin seeds and a sprinkle of sea salt.
Serve immediately and enjoy!
