Vegan Hatch Green Chile Queso


Perfect dip companion for our Ka-Pop! Chips

 

Only 6 Ingredients and under 20 minutes!

YIELD:  Approx. 1 Cup

INGREDIENTS:

1/4 cup red onion (small dice) 

1/4 cup red bell pepper (small dice)  

1.5 Tablespoons prepared Hatch Green chiles ( We like medium heat 505 brand, but adjust accordingly for heat level)1 cup almond milk ( unsweetened & unflavored) 

1/8 teaspoon smoked paprika  

5 oz (3/4 bag) of Daiya brand shredded cheddar

Cilantro & Tomato as optional garnish

 

STEPS:

In a small sauce pot, on medium low heat, sweat the onion and bell pepper until tender.

2. Add almond milk, green chiles, and paprika. Bring temperature up until just about to a simmer.

Stir in cheese. Keep on low heat for about 15 minutes until flavors have mixed. 

Finished!

Transfer to your favorite party dish or warmer to serve.  We recommend serving with Ka-Pop! Olive Oil & Sea SaltDairy-Free Cheddar Chips.
